The evaluation on paprika’s quality

After the dried chili/paprika been processed in powder or crushed, the quality could not be judged only by the our senses.

This is because the judgement of color based on senses is highly subjective. However, the color value of sweet paprika powder directly affects its quality.

As a result, a machine specially designed to detect the color value of sweet paprika — a color sorter came into being. Through the detection of the color sorter, we will obtain the objective and accurate color value of the deep-processed paprika products, and then determine whether its quality meets the requirements or not.

So, what is the color value?

The international unit of color value is expressed as ASTA. It refers to the absorbance per unit mass of raw extract. In the paprika-related industry chain, it is used to indicate the quality of paprika. The higher the color value, the better quality it is, and vice versa.

Finally, as a common spice, sweet paprika powder and crushed paprika are widely used in the field of seasoning and coloring for food. Sweet paprika has great advantages in food coloring and seasoning. On the one hand, adding sweet paprika powder or crushed paprika will improve the appearance of the food, making the food more bright red and attractive; on the other hand, the unique sweet aroma and benefits in health are widely welcomed by consumers.
